Sukhadi or goal papdi is a traditional Gujarati sweet made from ghee, jaggery and wheat flour. It is a nutritious dessert and is prepared on auspicious occasions as well as personal preference. Sesame seeds, dried fruits, and sometimes fennel are sprinkled on top to make sukhadi more palatable.
Dry roast the walnuts in a pan. Crush half a bowl of walnuts in a mixer and cut half a bowl of walnuts into small pieces.Heat ghee in a pan. When the ghee gets hot, add wheat flour to it and roast it on medium flame.. When the aroma of roasted flour comes, take it out in a bowl.Now add 1 spoon of ghee in the same pan and add the chopped jaggery and once the jaggery melts, immediately add the roasted flour. And also add ginger powder and walnut and stir well and remove from gas.
Immediately spread the sukhdi mixture in a plate greased with ghee and garnish with walnut and pistachio pieces and gently press with the help of a flat bowl so that the walnuts and pistachio pieces fit nicely into the sukhdi.
Once it cools down a bit, cut it into square or diamond shape and cut into pieces.
Walnut sweet dish is ready!
