Sago Potato Papad is a flavorful and crunchy Indian snack made from a perfect blend of sago (sabudana) and potatoes. Light and crispy, it’s a delicious treat enjoyed as an appetizer or paired with your favorite chutney. Ideal for those craving a gluten-free, vegan snack option, this papad brings a traditional taste with every bite!
Roughly grind the sago. And add 1 cup of water to it and let it soak for 1-1:30 hours.

Now peel the potato and grate it with the help of a grater. And wash it with 3-4 water. So all its starch will be removed.

Now take 3 cups of water in a thick pot. and let it heat up. When the water gets a little hot, add sago grains and keep stirring continuously. So that it does not stick from below. It will take about 10 minutes.

Add grated potatoes to it when the sago starts to look transparent. And add ginger-chilli paste, cumin and salt. And keep stirring continuously for 5-7 minutes. Finally add coriander in it.

Now let the mixture cool a little.
Take a thick piece of plastic, wipe it clean and apply a light coat of oil. And roll small round papad with the help of ladle or bowl. and dried in the sun. It takes about 2 days.
