First of all prepare all the masala. Now heat 2 table spoons of oil in a pan and add cumin, fennel and hing and add ginger-chilli paste and roast it on low flame.Now add groundnut and sesame seeds and besan and fry for 2 minutes. Then add the mashed potato and mix well and fry again for about 1 minute. After that add all the remaining spices and mix properly. And leave the masala to cool.

Now wash the tomato and remove the top eye and cut it into 4 parts in such a way that it does not fall apart from the middle. When the masala cools down, stuff it and press it.

Now heat 4 tbsp of oil in a non-stick pan. And put all the stuffed tomatoes in hot oil. Place the cut side down. And grease some oil from the upper side. And close the lead of the pen and let it be soft for a while.When the steam gets stuck in it, stir all the tomatoes with the help of a spatula and turn them over and again close the lid and let it be soft. Also add 3-4 table spoons of water so that the tomato does not get burnt. Let the tomato cook like this.

Serve with hot roti or paratha.

You can also add jaggery to it.
